I got into a big debate last night on my Facebook page over the above pic of Kale.
So called veggie "experts" were claiming what I sauteed WAS NOT Kale. :)
Kale is one of the healthiest veggies on the planet. It's very high in beta carotene, vitamins K & C and rich in calcium. Some think eating Kale on a regular basic could provide significant health benefits, including cancer protection and lowered cholesterol.
I'm trying to eat more of this so-called SUPER FOOD.
And yes, veg heads, what I cooked last night WAS indeed Kale...organic BABY Kale.
That being said, anyone have any killer Kale recipes to make this stuff easier to eat? My Kale, red pepper, jalapeno, carrot & white wine sautee was ok, but it needed something to jazz it up.
You can easily sub the kale for the spinach called for in this recipe. http://www.eatingwell.com/recipes/skillet_gnocchi_with_chard_white_beans.html
What the Kale
Take your kale and boil it until it is nice and soft and tender, about 20 minutes. then drain it really well, squeeze all the water out. Take olive oil and garlic and cook it till garlic is tender then add the kale, salt and pepper, really good
